What? You said Homemade Strawberry Jam in the Instant Pot? Well count me in. Wherever that is happening I want some!

Like many 30 somethings that grew up in the North of England in the 80s and 90s strawberry jam was a staple of the diet.

You always had at least one jar of it in the door of the fridge and then whenever you had some spare bread, then out would come some bread, butter and strawberry jam.

Recipe This | Instant Pot Strawberry Jam (2)It was always amazing and always felt like something luxury when it reality it was not. It was cheap to make, delicious and nearly always served for breakfast on a Saturday morning.

My most fond memories were always of my paternal grandparents serving it up. They loved their jam or marmalade on toast.

On a Saturday they would start the day with a single boiled egg, followed by loads of buttery toast with lots of strawberry jam or orange marmalade.

I never cared much for the marmalade as I always thought that it tasted disgusting (and still do) but the strawberry jam with the melted butter was out of this world amazing.

It would have come from either the supermarket or a Yorkshire jam and pickle shop.

But on the other hand if you have fresh strawberries and an Instant Pot then making your own Instant Pot Strawberry Jam is an absolute must.

When we made our first batch in the Instant Pot we were so, so tired. It was a heat wave and the temperatures was well into the 40’s and we felt like we had been suffocating from global warming.

We had also been up all night comforting our under 3s. As if there is something a toddler and a baby don’t like then it is super hot houses.

But we had a lot of strawberries that needed using up. It was a case of them being super hot and we needed to use them up before they turned and went mouldy. So here we are on little sleep in the heat making strawberry jam.

Thankfully the great thing about theInstant Potis that it is quick and effortless. You probably put more effort into sterilising the jam jars or eating the jam than you do in making the jam.

To make strawberry jam in the Instant Pot is just a few easy ingredients:

Plus, if you want it thick like you buy from the grocery store, then add in some gelatine.

That is still JUST 5 SIMPLE ingredients that are very easy to source.

Here in Portugal everything is always about frugality. So its no surprise that in the hospitals all they seem to give you to snack on is bread and jam.

There was so much of it when I was in hospital having my kids that by the time I came out, I didn’t touch jam for a long time.

Well until now that is!

When we made this Instant Pot Strawberry Jam version it made loads of jars and gave us the chance to give some to our next door neighbour.

She is a lovely elderly lady and is always giving us fresh fruit and vegetables from her allotment so it gave us the chance to give some back.

Plus even though I love strawberry jam I struggle to eat it all in a reasonable time, so a big batch like this would last me months.

  • Sterilise your jam jars.

  • Clean and dice your strawberries and place them into your Instant Pot inner pot.

  • Add the sugar, honey and the rind and juice from a medium lemon.

  • Give the contents of the Instant Pot a quick stir and place the lid on the Instant Pot. Set the valve to sealing and cook for 2 minutes on manual pressure.

  • Once it beeps allow natural pressure release for 10 minutes.

  • After 2 minutes cooking time and 10 minutes NPR, carefully remove the lid on the Instant Pot.

  • Stir the jam and using a hand blender, blend until you have a thick syrup.

  • Add in your jelly powder, stir and pour into jam jars.

  • Cool overnight.

Notes

We cooked our Instant Pot Strawberry Jam in the late afternoon, then placed it in the fridge and it was ready to use by late morning of the next day. We recommend 3 medium sized mason jars for your jam making.

ALWAYS sterilise your jam jars before you use them. Because strawberries and raspberries are very similar fruits, you can mix and match them in this Instant Pot Strawberry Jam. Don’t put the fresh strawberries in whole. It will stop the liquid breakdown for the Instant Pot to come to pressure.

Please make sure that you give it 10 minutes NPR, if you don’t you will have a dangerous strawberry explosion. For jelly powder I used a quick half a sachet of strawberry jelly powder. You can use any that you like
